Gouda Stuffed Beef Burgers

Gouda Stuffed Beef Burgers made from Samish Bay gouda and Mesman Farms ground beef celebrate the partnership between these two farms that delivers organic milk from Mesman to Samish Bay Creamery to be used in their award winning cheeses. 

The cheese stuffed burger is topped with a mixture of spicy sweet chile onion jam, peppery baby arugula and quick pickled garden vegetables to add a vinegary bite and refreshing crunch that compliments that buttery sharp gouda and flavorful ground beef so well. But these cheesy beef burgers are also delicious topped however you desire!

Ingredients

  • 1 pound Mesman Farm ground beef

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoons salt

  • 1 teaspoon black pepper

  • 1 cup shredded Samish Bay Cheese gouda, about 6 ounces

  • 4 burger buns

  • Optional, for serving
  • ¼ cup chile onion jam

  • 1 cup baby arugula

  • ¼ cup quick pickled vegetables

  • ¼ cup crispy fried onions

Preparation

  • In a medium bowl combine ground beef and seasonings. Form mixture into 4 thin patties.
  • Separate shredded cheese into 4 equal portions. Press each portion into a flat disc.
  • Place one cheese disc into the center of each of the burger patties, bringing edges of patties up and around the cheese disc, pressing on the top to seal and form thick burger patties. 
  • In a large large cast iron pan, or barbeque, over medium heat, cook burger patties until evenly browned and cooked through, about 3-4 minutes on each side, or until beef registers 130-165 degrees Fahrenheit.
  • Toast buns if desired, then add chile onion jam to bottom bun. Top with a pile of arugula then burger patty. Finish with quick pickled vegetables, crispy fried onions and another chile onion jam slathered bun. 
  • Enjoy!
