We’re starting #GSVMemberMonday today and can’t think of a more delicious way to start! We’re pleased to welcome Evolve Chocolate + Cafe to the Genuine Skagit Valley family. Owned by Shannon and Chef Christy Fox since 2018, the café is perfectly perched above Village Books in Historic Fairhaven. Evolve offers thoughtful rotating food & drink, book club dinners, holiday baked goods, artisan made chocolates, special author & poetry events and more. Coming soon: A new restaurant in Bow showcasing the farmers, livestock, flowers, and dairy producers of the Skagit Valley – we can’t wait!

Shannon says that one rule of thumb for each ingredient entering the kitchen is to have multiple uses, keeping the kitchen towards zero waste.

We recently asked Shannon and Chef Christy, “What is your favorite #SkagitValley fruit or vegetable?”

“Chef Christy loves squash quite a bit. She loves the versatility and could probably open a restaurant concept just using squash. AND they keep so well…” says Shannon.
