Learn how to preserve food! This 4 part series will help you increase your food access using safe, tested protocols.
In this Lunch and Learn series, WSU Food Safety/Preservation instructor Jennie Goforth will teach techniques and explain the items needed to preserve foods in your home. This series will help get you started with food preservation techniques to advantage of our amazing local produce and reduce waste in your kitchen. This class will be taught online using Zoom. The Lunch and Learn series is slightly different than their normal food preservation series in that the lessons are 60 minutes each instead of 90. The content will not be quite as comprehensive as the traditional course, but certainly more than adequate to help get you started with food preservation basics!
Participants will receive a variety of links for free downloadable recipes, guidelines, and articles through a link to a Google Drive. If you are a SNAP recipient or feel that the class fee presents a financial barrier, you may also be eligible for a partial or full scholarship, please contact j.bryan-goforth@wsu.edu for more information.
Week 1 Water Bath Canning-learn to preserve jams, jellies, salsa, canned tomatoes, and more
Week 2 Fermentation and Pickling-we’ll learn all about sauerkraut and learn to ferment and make quick pickles and more!
Week 3 Freezing and Refrigeration-build on your experience with these common methods and expand your knowledge! We’ll look at which foods are best suited for this method, preparation methods for best quality, storage time and methods, troubleshooting, and organizational methods for easy access and inventory.
Week 4 Dehydration, Root Cellars, and Households food systems-learn about other food storage methods including drying and root cellars and other microclimate storage, learn to reduce food waste and to store food efficiently for increased access!
